echo esc_attr($excerpt_text); is for the excerpt content. yes we have added a value for read more. So that you can change the text of read more.

Goto dashboard -> appearance -> customize -> ambition theme options -> excerpt options and check Post Excerpt More Text, add any text will be displayed instead of read more.
